Local, Organic, Foraged

Food & Drink

We cook Tribal, Shan, and Northern Lanna dishes with emphasis on fresh organic produce, home-grown and family-farmed from the village, foraged, fished and from the local market. We have a largely carbon-free footprint, no packaging, no air miles. Come and gather from the garden and orchard, fish and forage according to season. Cook your way to tribal survival with charcoal burners in bamboo tubes.

Authentic food, shared experiences

Capture, Cook, Eat & Discover

For catering, our style is based on sustainable Tribal traditions. Tribal survival depended for Millenia and is still largely based on traditional natural ingredients sourced from subsistence farming and the hunter- gatherer ancestral legacy of foraging, fishing and hunting, cooked on charcoal and wood and stored with no carbon cost, zero emissions, no processing, packaging, distribution or air miles. A beacon for the eco-conscious. At Kanlaya’s we grow both Mountain and paddy field rice, have a productive vegetable garden and orchard, and forage, fish, buy and barter at the weekly Tribal Market. We offer cookery classes and opportunities to forage and fish according to season, based on this approach. It’s as much about exploring Tribal Culture and Animist beliefs, as mastering technique and recipes.

We prepare local Tribal and Shan (adjoining Burmese State.) recipes and specialities. Usually served by candle-light in the Courtyard with the firepit in the background
